Clementine Fizz
Ingredients:
2 fresh clementines
100ml sparkling water
Dash of yacon syrup (or more, depending on how sweet you like it!)
Sprigs of rosemary
For the rim
1 TSP of sea salt
1 TSP dried clementine zest
1 TSP golden caster sugar
Method:
Cut the clementines into quarters. Use one quarter to rim the cocktail glass before putting it back with the others. Mix the sea salt, dried clementine zest and golden caster sugar on a plate. Dip the rim of the cocktail glass in this mixture til it’s coated. Leave the rim of the glass to dry a little before adding your cocktail. Using a cocktail muddler, ‘muddle’ the clementine quarters with fresh rosemary before adding the sparkling water and yacon syrup. Top with another sprig of fresh rosemary.
Add a single shot of clear tequila for an alcoholic cocktail
