Ingredients
- 200 g red lentils, rinsed
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 5 cloves garlic, minced
- 400 g can chopped tomatoes
- 1 L vegetable broth
- 1 TSP cumin
- 1 TSP turmeric
- 1/2 TSP black pepper
- 1/4 TSP cayenne pepper (optional)
Instructions:
- In a large pot, sauté onion, carrots, celery, and garlic until softened.
- Add lentils, diced tomatoes, vegetable broth, and spices.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes, until lentils are tender.
- Blend for a smoother texture or leave it unblended for a chunkier consistency.
- Serve hot with a side of buttered fibre-rich bread.
