Kimchi & egg fried rice

Kimchi is a traditional Korean dish made up of fermented, spicy, and tangy vegetables, typically cabbage and radishes. Ingredients (serves 1)

  • 70 g brown rice, cooked
  • ½ onion, diced
  • 1 medium carrot, diced
  • 1 egg
  • 2 TBSP kimchi, chopped
  • 1 TBSP soy sauce
  • 1 TSP oil (coconut or olive)
  • 1 TSP sesame seeds

Method

  1. Unless you’re using pre-cooked rice, cook your rice in a pan of boiling water per the instructions, drain and set aside.
  2. Heat your oil in a large pan over medium heat.
  3. Add the onions and carrots, sauté until soft.
  4. Push the vegetables to the side and crack the eggs into the pan. Scramble until cooked.
  5. Add the cooked rice, kimchi, and soy sauce. Stir to combine and heat through.
  6. Sprinkle with sesame seeds before serving.
