With strawberries in season, what better way to indulge in their fresh, juicy goodness than by whipping up a delicious yet simple crumble! Here’s a twist on the classic recipe, made with strawberries, topped with a golden, buttery crumb. Enjoy!
Ingredients
Serves 6-8
For the filling –
- 600g strawberries (approximately 2 punnets), chopped into chunks
- 1 TBSP lemon juice
- 1 TBSP water
For the crumble topping –
- 120g plain flour
- 100g butter, chilled and cubed
- 75g brown sugar
- 50g oats
- ½ tsp cinnamon
- Pinch salt
To serve (optional) – vanilla ice cream, custard or cream
Instructions
- Preheat your oven to 175 degrees Celsius.
- In a large bowl, combine the strawberries, water and lemon juice and mix well. Transfer to a greased baking dish (ideally 23cm x 23cm).
- In another bowl, combine the flour, oats, sugar, cinnamon and salt. Add in the cold butter cubes and using the tips of your fingers, work the butter into the mixture until it resembles coarse bread crumbs.
- Spread the crumble topping over the strawberry mixture and sprinkle with a little more brown sugar for extra crunch.
- Bake in the oven for 30 minutes or until the top is golden brown and the strawberry filling is bubbling.
- Allow the crumble to cool slightly before serving. Serve warm with a scoop of vanilla ice cream, custard or a dollop of cream! Enjoy!
